Celeriac and kohlrabi nutty slaw with a chilli and mint kefir dressing
1 celeriac, cut into batons
1 small kohlrabi, cut into batons
1 large carrot, cut into batons
1/4 red cabbage, finely sliced
3 spring onions, sliced
3 tbsps of cashew nuts
3 tbsp of peanuts
8 tbsps Kefir, you could use greek yoghurt instead
10 mint leaves
Juice of 1 lime
1 small green chilli, finely chopped
1 small clove garlic, crushed
1 tsp ginger, grated
Pinch of salt
2 tbsps the Governor EVOO
1. Make the dressing by placing all the ingredients except the kefir into a small food processor and blitz into a paste. Set aside.
2. Heat a small pan to a medium heat, add the nuts and spread out evenly. Toss every 10 seconds until they turn golden brown and aromatic.
3.Add a tbsp at a time of the paste into the kefir, stir. Keep adding to taste.
4.Place the chopped vegetables in a bowl, add a couple of tbsps of the dressing and stir to coat. Top with the toasted nut.
