Whipped feta and apricot toast with walnuts and a honey, apricot drizzle
Ingredients
200g Feta
2 tbsps greek yoghurt
4 apricots, halved and stones removed
1/2 lemon, juiced
1 tsp honey
A few walnuts, roughly chopped
2 thick slices walnut bread
1-2 tbsp The Governor Extra Virgin Olive Oil
Method
1. Crumble the feta into a small food processor. Add the yoghurt, lemon juice and 1 tbsp of EVOO. Whizz until smooth and creamy. Add more EVOO if needed. Set aside.
2. Heat the grill to medium. Place the apricots on the grill and cook for 12minutes until softened.
3. Scoop out the flesh of 1 apricot and place in a sieve. Using a spoon push the apricot through the sieve into a bowl, add the honey and a drizzle of oil and whisk together.
4. Toast your bread. Served topped with the whipped feta, apricots, walnuts and the apricot/honey sauce.
